Skillet Quinoa

This is a great recipe for those AdvoCare 24 Day Challenge Cleanse Phasers! Just remember to use Low Sodium broth!



Ingredients:

1 c Dry Quinoa

2 C Veggie Broth (Low Sodium)

2 tsp Extra Virgin Olive Oil

2 Tbs Minced Garlic

2/3 C Sun Dried Tomatoes

1 tsp oregano

1/2 tsp pepper

1/2 tsp red pepper flakes

Pinch of Sea Salt

1 can Artichoke Hearts, drained and chopped into quarters. (Optional)



Directions:

In Skillet, add rinsed quinoa, broth and cover. 

2. Bring to a boil then reduce heat and simmer for about 15 minutes.

3. In separate skillet, add oil, tomatoes and garlic. Saute' for about 1 minute.

4. Add oregano, pepper, red pepper, salt and artichokes. Saute' for another minute then turn off heat.

5. When quinoa has absorbed the broth, add the spices mixture, toss, and allow to simmer for about 5 minutes together.

You can add chicken or even shrimp with it for your protein! I like it plain for lunch :)
